Rava Idli For RCI


This is my entry to Ashaji's RCI - Karnataka. Thanks asha for hosting a lovely event. For this event only I tried this breakfast dish called "RAVA IDLI". Really we enjoyed a lot. I tried Lata's Rava Idli recipe . Really came out very delicious. Thanks Lataji. Here is my recipe:


Rava Idli:
Prep Time : 15 minutes
Cooking time : 6 minutes
Serves : 4
Cuisine : Karnataka

Ingredients:
2 cups roasted fine semolina or fine rava
1 1/2 cups curds
salt to taste
2 tbsp finely chopped coriander leaves
2 tbsp finely chopped curry leaves

For tempering:
2 tbsp oil
1 tsp mustards
1 tsp urid dal
1 tsp chanadal
2 finely chopped green chillies

Method:
1. For this rava idli, I used roasted semolina.

2. Heat oil in a kadai, add mustards, chanadal and urid dal, fry for 2 minutes on low heat. Add green chillies, finely chopped coriander leaves and curry leaves and turn off the heat.

3. Add above tempering to roasted semolina, add beaten curd and salt, mix well. Use little water to mix the batter well.

4. Pour the batter in greased idly trays and steam in pressure cooker for 6 minutes (without weight). Remove idlis after 5 minutes.



5. Serve hot with any chutney of your choice.

MY FAVORITE SNACK - Veg Manchurian

I love chinese food very much. Yesterday I prepared vegetable manchurian. This is my family's favorite. This is my entry to Hima's What's your favorite snack? Hima! thanks for hosting such a lovely event. Here is my recipe:


Veg Manchurian:
Prep Time : 20 minutes
Cooking time : 20 minutes
Serves : 3
Cuisine : Indian

Ingredients (For Manchuria Balls):

1 cup finely chopped carrots (I used mini chopper to cut all the vegetables)
1/2 cup finely chopped beans
1/2 cup finely chopped coriander leaves
1/2 cup finely chopped onions (optional)
1/2 cup finely chopped cabbage
4 tbsp maida or all purpose flour
4 tbsp cornflour
2 Eggs
1 tsp ginger garlic paste
salt as per taste
1 tsp pepper
1/2 tsp red chilli powder
1/2 tsp Ajinamoto (Chinese salt)

For Tadka/Talimpu/Popu :
1 tbsp oil
3 tbsp finely chopped garlic
2 tbsp finely chopped green chillies
2 tbsp finely chopped curry leaves
2 tsp dark soya sauce (optional)
2 tsp tomato sauce
finely chopped coriander leaves for garnishing


Method :
1. Mix all above ingredients (Manchurian balls ingredients) in a bowl into a tight content, make small size balls, deep fry in oil till light brown color on medium flame.

2. Heat oil in a kadai, add chopped garlic, chopped green chillies and chopped curry leaves, saute for few seconds, add soya sauce, tomato sauce and 1/4 cup water, mix well, bring to a boil.

3. Now add above fried manchurian balls, mix gently, fry for more 5-10 minutes on low flame. After veg. manchurian becomes desired hot, turn off the heat and garnish with finely chopped coriander leaves.



Note : 1. If you dont like eggs, you can replace with water to mix the contents tightly. But eggs will give more taste.

2. Along with above vegetables, you can add finely chopped capsicum and gobi also.

CARROT PEAS PULAV FOR JFI


This recipe is my own creation. This is my entry to Sharmi's JFI - Rice event. The theme is Rice. This is for the month of September. Indira of Mahanandi started Jihva For Ingredients. Thanks Indira and Sharmi for hosting. Really its very simple and easy rice dish to prepare. I prepared this pulav with leftover carrots and green peas with basmati rice. Here is my recipe:

Carrot Peas Pulav:
Prep time : 30 minutes (to soak the rice)
Cooking time : 45 minutes
Serves : 4
Cuisine : Andhra


Ingredients:
2 cups basmati rice
1 tbsp oil
1 tbsp clarified ghee or butter
2 Elachi
2 Lavangi
1" piece dalchini
2 bay leaves
1 tsp Cumin Seeds
4 green chillies (slit them into length wise)
1 tsp ginger garlic paste
few curry leaves (optional)
1 cup chopped carrots
1/2 cup green peas
salt as per taste
3.5 cups of water
finely chopped coriander leaves for garnish (optional)
chopped pudina for garnish (optional)

Method :
1. Soak the basmati rice for 30 minutes.

2. Heat oil and butter in a kadai, Once heat, add lavangi, elachi, bay leaves and dalchini, saute for few seconds, add green chillies, curry leaves and ginger garlic paste, again saute for few more seconds on low heat.

3. Now add chopped carrots and green peas, mix, fry for 5 minutes on low heat.

4. Add soaked basmati rice, mix gently, fry for 2 minutes, add water, coriander leaves, mint leaves and salt, mix, cook until Rice cooks completely, stirring once or twice between.


5. Serve with basic gravy or Cucumber Raita.

Note : 1) I prepared this rice in electric rice cooker.
2) Here i didn't use coriander leaves and pudina leaves. If we use, then we can get extra flavors.
3) You can use chopped onions also. You have to fry onions after spices.

Tortilla Pizza (Quesadilla) For Blog - Picnic


Fun in the Sun


This Quesadilla is my entry to Anupama's event, "Fun in the Sun", which is about PICNIC FOOD RECIPES. Thanks Anupama for hosting a lovely and great event. This is a mexican snack, this i tried from Sailu's food blog. The above tortillas, I bought from an American store. Really taste is awesome. You can pack it easily for any picnic and also can serve it as a weekend snack. For this, we can use seasonal vegetables and some Indian flavours. Here is the recipe:


Tortilla Pizza:
Prep time : 10 minutes
Cooking time : 20 minutes
Cuisine : Mexican

Ingredients for flour tortillas:
1 3/4 cups flour
3 tbsp butter
1/2 tsp salt
1/2 tbsp baking powder
approxmately 1/2 cup warm milk

Method for preparation of tortillas:
  1. In a bowl, take the flour, add salt, baking powder and butter, mix well. Now slowly add the warm milk to prepare soft dough, kneeding well for 5 minutes, keep aside for 30 minutes.
  2. Now take lemon size balls of the above dough and using a roll pin to roll out like very very thin rotis like normal chapati size.
  3. Pre heat a tawa, place each tortilla on hot tawa for only 5 seconds on each side and remove from tawa and keep aside.
Ingredients for filling: (This is for 1 tortilla pizza):

2 uncooked flour tortillas
4 tbsp finely chopped carrots
4 tbsp finely chopped beans
2 tbsp fresh grated coconut(optional)
3 tbsp grated cheese
1/2 tsp pepper(optional)
1 finely crushed dry red chilli
2 tbsp tomato sauce
salt as per taste
1 tbsp oil
3 tbsp chopped coriander leaves



Method:
  1. For this vegetable filling, i used finely chopped carrots, finely chopped beans and fesh grated coconut. Along with these, you can use finely chopped seasonal vegetables like cabbage, capsicum, onions, babycorn and finely chopped garlic also.
  2. If you use garlic, then saute the garlic followed by all vegetables in a 1 tbsp of oil for 4 minutes. Then add grated coconut, coriander leaves, pepper and crushed red dry chilli flakes (as per your taste) and salt, mix well and keep aside.
  3. First you place a tortilla in a plate, now take the above vegetable mixture in the centre of tortilla, now add the tomato sauce on the top of the vegetable mixture, next spread the 3 tbsp of grated cheese, wet the edges of tortilla with water, place another tortilla on top and press the edges with the help of a fork.




  4. Pre heat a tawa, place the above tortilla pizza on tawa, roast the tortilla pizza both sides on medium heat only. Because you want the cheese to melt inside. If you want you can add some oil on both sides of the pizza, while frying. I roasted the tortilla pizza little bit more time, because my hubby loves crispy. You can reduce the roast time according to your taste.
  5. Now take into a serving plate, slice into triangle with a pizza cutter or knife.

  6. If you want you can serve with tomato sauce otherwise the plain one also very tasty. But you have to serve it hot.
Note: 1. Instead of vgetable filling, you can use boneless shredded chicken for chicken tortilla pizza. You can change the filling as of you want. :-)

Talimpu Rice For Sumeer Express Cooking Event


This is my entry to Mallugirl's Summer Express Cooking Event. This event is all about good food and speed. A meal to be made in anywhere from 10-30 minutes, start to finish. You can use semi- homemade products, such as ready made rotis and tortillas, frozen veggies, or precooked chicken or left over rice. Thanks Mallugirl. For that I prepared this simple, delicious and quick rice dish with left over rice. Its my favourite rice item. Simple ingredients and simple process to follow but yummy taste.


Talimpu Rice:
Prep time : 5 minutes
Cooking time : 15 minutes (See the method)
Serves : 2
Cuisine : Andhra

Ingredients:
2 cups cooked and leftover rice
Red chilli powder : 1/2 tsp
Salt as per taste
1 medium size chopped onion
1 green chilli (chopped)
1 dry red chilli (cut into 2 pieces)
few chopped curry leaves
1/2 tsp jeera
1/2 tsp mustards
1 tbsp oil
1 tbsp urid dal(minappappu)
1 tbsp chana dal (shanagapappu)
3 tbsp groundnuts
a pinch of turmeric powder

Method : First 5 minutes for Preparation:

1. Chopp onion, 1 green chilli, red dry chilli and few curry leaves and keep aside.

2. Divide each rice grain. Mix red chilli powder and salt to rice and keep aside.

3. Keep groundnuts, chanadal and urid dal into a plate.

Cooking time : Next 15 minutes

4. Heat oil in wide vessel, once heat, add jeera and mustards; let them pop, add urid dal, chana dal and ground nuts, roast them for 2 minutes (don't burn them) on low heat.

5. Next add chopped onions, green chillies, red chilli and curry leaves. Fry them till onions become lightly golden colour. Lastly add the turmeric powder, mix well.

6. Then add mixed rice to above tempering, mix well, cover with a lid, stirring between, let the rice becomes desired hot, then turn off the heat.

7. Yummy talimpu rice is ready. Its looks in yellow colour with superb taste.


Note: 1. While doing this talimpu rice, you should take care about the roasting groundnuts. They should roast correctly otherwise they may burn. It will change complete taste of talimpu rice.
